Discover the ancient art of fermentation and learn how simple ingredients can transform into vibrant, flavorful foods full of character. During this hands-on workshop, we’ll explore the science behind lactic acid fermentation, food safety, and the techniques needed to confidently ferment vegetables at home.

Using seasonal produce harvested from local farms, participants will prepare kimchi and salsa while learning how salt, time, and beneficial microbes work together to preserve food naturally. We’ll discuss troubleshooting, storage, flavor variations, and how fermentation connects cultures and food traditions across the globe.

We’ll pause midday to enjoy a shared Soil to Skillet lunch prepared by the Willamette Farm & Food Coalition’s culinary team, showcasing whatever is freshest from the farm that week. Vegan and gluten-free options will be available.

Participants will leave with:

  • Hands-on experience creating fermented vegetables

  • A foundational understanding of fermentation and food safety

  • Their own jars to continue fermenting at home

  • Recipes, resources, and troubleshooting tips

  • Confidence to begin exploring fermentation in their own kitchen

Whether you’re curious about fermentation or ready to begin building your own pantry of living foods, this workshop invites you to slow down, connect with seasonal ingredients, and experience one of humanity’s oldest methods of preserving the harvest.
