Today we're making a blueberry crisp, but the recipe works just as well with blackberries, marionberries, strawberries, raspberries, peaches, nectarines, cherries, plums, apples, pears, or a combination of your favorites.

A fruit crisp is baked fruit topped with a buttery mixture of oats, flour, and sugar until golden brown and crisp.

Blueberry Crisp
Ingredients
Filling
4 cups fresh blueberries
1 tablespoon lemon juice (optional)
1 to 2 tablespoons sugar or honey (optional, depending on the sweetness of your berries)
Crisp Topping
1 cup rolled oats
½ cup all-purpose flour
⅓ cup brown sugar
½ cup melted butter
Pinch of salt
1 teaspoon cinnamon or a splash of vanilla (optional)
Directions
Preheat your oven to 350°F.
Place the blueberries in an 8x8-inch baking dish or a similar-sized oven-safe dish. Add the lemon juice and sweetener if using.
In a separate bowl, stir together the oats, flour, brown sugar, salt, and cinnamon. Pour in the melted butter and mix until the topping becomes crumbly.
Sprinkle the topping evenly over the blueberries.
Bake for 35 to 45 minutes, or until the fruit is bubbling around the edges and the topping is golden brown.
Let the crisp cool for about 10 minutes before serving.
Serve warm on its own or with vanilla ice cream, whipped cream, or plain yogurt.

One of our favorite things about this recipe is how easily it changes with the seasons.
In early summer, try strawberries or cherries.
As summer continues, use blueberries, blackberries, marionberries, raspberries, peaches, or plums.
When autumn arrives, reach for apples, pears, or even quince if you're feeling adventurous.
Don't be afraid to combine fruits, either. Blueberry and peach, blackberry and apple, or raspberry and plum are all wonderful combinations.
